GOOD RETAIL PRACTICES
Good Retail Practices (GRPs) are preventive measures that include practices and procedures that effectively control the introduction of pathogens, chemicals, and physical objects into food. If GRPs are not implemented, they could contribute to foodborne illness.
PERSONAL CLEANLINESS & HAIR RESTRAINTS
Examples violating good retail practices include a food employee not wearing hair restraints or a food employee wearing unclean outer garments while handling food and utensils.
REQUIREMENTS
- All food employees preparing, serving, or handling food or utensils shall wear hair restraints, except for employees, such as counter staff who only serve beverages and wrapped prepackaged foods, hostesses and wait staff, if they present a minimal risk of contaminating non-prepackaged food, clean equipment, utensils, linens and unwrapped single-use articles (§113969)
- Food employees shall wear clean outer clothing to prevent contamination (§113971)
