GOOD RETAIL PRACTICES
Good Retail Practices (GRPs) are preventive measures that include practices and procedures that effectively control the introduction of pathogens, chemicals, and physical objects into food. If GRPs are not implemented, they could contribute to foodborne illness.
NON-FOOD CONTACT SURFACES CLEAN
Examples violating good retail practices include sticky/dirty shelving throughout the facility or grease accumulation on the sides of a deep fryer.
REQUIREMENTS
- All nonfood contact surfaces of equipment shall be kept free of accumulation of dust, dirt, food residue and debris [ยง114115(c)]
